Lazy daisy on board!

Ready-made sweetened shredded coconut is always tempting to me. Ideas with this simple ingredients are plenty. But at times it can be easily forgotten as well. So while scanning through the refrigerator tray, a small packet stuffed in a Ziploc caught my attention. A week old left over portion of sweetened coconut. My first instinct was to prepare a mixture for coconut sandwich. But the mouth-watering picture and the easy to follow recipe I read the other day in one of my favorite cookbooks nudged me to try something different and interesting. That’s the story behind this recipe. The outcome was amazing.

The most favorite part was the coconut cream mixture. Each bite is rich, yet smooth and gives a sense of satisfaction and at the same time you’ll be quick to take the next bite. . The same coconut mixture can be used to prepare sandwiches as well. This recipe is for sure a keeper. And it would be a perfect treat when friends come over.

Ingredients
¾ – 1 cup all purpose flour
¾ tsp baking powder
1 tbsp milk powder
Salt ¼ tsp
In a mixing bowl, combine all the above mentioned ingredients and set aside.

Butter 2 tbsp
Milk ¼ cup
Honey 2 tbsp
Warm the milk in a microwave and melt the butter. Add honey to it and set the mixture aside in a warm place so that the butter will stay melted.

Egg 1
White sugar ¾ cup
Vanilla 1 ½ tsp

In another bowl, beat egg, add sugar and vanilla. Add the flour mixture to it. Mix everything together by adding the butter and milk mixture little at a time to keep the consistency of the batter. Turn the batter into an already greased baking pan. Now gently bang the pan lightly on the table to settle the batter. Bake at 350 oven for about 30 minutes.

Coconut cream mixture for the topping
Shredded coconut ¾ cup
Butter 2 tbsp
Light brown sugar ¼ cup
Milk 3 tbsp
Honey 1 tbsp
Vanilla 1 tsp
Salt a pinch
Cinnamon powder ½ tsp (Optional)

In a medium saucepan, bring everything to boil except the coconut and turn off the stove. Add coconut to it. Stir well. Now it’s ready to spread on the cake. Spread the mixture on the cake, Enjoy!
